Alaska: Fish Loaf Recipe

Hardly a month went by, when I was growing up, that the fish loaf did not show up on the dinner table. I am sure this is true of other households when meat loaf was a regular. In Alaska where salmon is abundant, we had FISH LOAF.

Salmon Loaf
from The Greater Yukon Cookbook, Galena, Alaska

2 cups cooked salmon (canned salmon works well)
2 eggs (beat well)
1/4 cup melted butter
onion, celery, garlic (saute separately)
salt and pepper to taste

Flake salmon (remove bones), add eggs and other ingredients. Place in greased loaf pan. Bake 40 minutes at 350 degrees. Makes small flat loaf for 2 or 3 people.
