We were getting low on cereal and no one had time to run by the grocery store so I whipped up some Oat Bran Muffins to get us through the week.
I lined them up on my new green milk glass cake stand for the photo shoot!
recipe from the back of the Old Wessex Brand box of Oat Bran
2 1/4 cups Old Wessex Oat Bran
1/4 cup dried cranberries or goji berries (anything you have in the pantry will work fine)
2 tsp baking powder
1/2 tsp salt
2 egg whites (or substitute 1/2 cup apple sauce)
3/4 cup soy milk
1/2 cup honey or maple syrup
2 tbsp saffron oil
Flax seeds to taste
1. preheat oven to 425 degrees
2. mix dry ingredients and then liquid ingredients in separate bowls, then combine.
3. Add dried fruit and flax seeds to your taste. For me that is about 1/2 cup fruit and 2 tbsp seeds. You might need to add more oat bran if the mix is too soupy.
4. Use a small spoon to fill a greased mini-muffin tin (a regular muffin tin makes really dense muffins).
5. Bake for ~10 minutes or until toothpick comes out clean.
Store these in the fridge and heat in the microwave ~10 seconds in the morning. I love mine with soy nut butter or soy margarine.
