Green Salad with Radishes and Manchego


Manchego goes very well with red wine. I will be making this salad for tonight's pre-concert under the stars dinner.

Green Salad with Radishes and Manchego
from Blueprint

10 cups mixed greens
4 radishes, ends trimmed and thinly sliced
2 ounces shaved manchego cheese

Wash and dry greens. Add radishes and manchego shavings to bowl.

Dressing
2 tablespoons minced shallots
2 tablespoons sherry wine vinegar
1 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Wisk above ingredients together. Slowly add 1/4 cup + 2 tablespoons extra virgin olive oil. Right before serving drizzle dressing on the salad and toss to combine.

Serves 6
