1 1/4 cups water
3 tbsp butter, cubed
2 tbsp honey
2 cups whole wheat flower
1 cup bread flower
1/4 cup instant potato flakes
1 tbsp plus 2 tsp vital wheat gluten (you can find it at whole foods)
1 1/2 tsp salt
2 tsp yeastSet your bread machine to medium crust, 1.5 pound loaf, and the whole wheat setting. This recipe works well on the timed setting. I often put it on the timer before I go to bed so that I can wake up to a done, freshly baked loaf.
n.b. this bread rises a lot and a 2 pound loaf would definitely overflow in our machine, best to stick to the 1.5 pound loaf.
